ARUGULA SALAD

This salad started off as something quick to go along side some pizza that my sister and I had ordered one night. Pretty instantaneously, it became her favorite salad, and our go-to "pizza night salad". Now.... it's just our go-to salad. We've got spicy arugula topped with sliced red onions and a punchy dressing of olive oil, grated garlic, chili flakes, black pepper, lemon juice and a dusting of ranch powder. The buttermilk in that ranch powder provides a tang that requires you keep coming back for more. Then finally, we make it rain with shaved parmesan that adds the salty, fatty, richness this salad deserves. What makes it even better is, it comes together in 5 minutes and if you're like me, you've got all of these ingredients on hand already.


PREP TIME: 5-10 minutes | SERVINGS: 1-4

 

INGREDIENTS


- 5 oz Arugula - pinch of chili flakes


- sliced red onions - ranch powder


- 1/2 clove garlic grated - parmesan cheese (block)


- 3 tblsp olive oil - freshly ground black pepper


- 1 lemon - salt


INSTRUCTIONS


1. Add olive oil, grated garlic, lemon juice, chili pepper flakes, black pepper, and pinch of salt to bowl. Mix well.


2. Add in arugula, sliced red onions and toss. Give everything a nice dusting of ranch powder. Taste and adjust for your preferences, keeping in mind we're topping with salty parmesan.


3. Plate. Shave parmesan on top.


SUGGESTIONS/NOTES


  • This salad's pungency pairs well with something on the fattier or richer side. Pizza, like i previously mentioned is a great choice, but so is salmon or something crusted like a chicken milanese or heck, even chicken nuggets. Make this salad heartier with croutons, avocado, or a side of potato wedges. There's endless variation!
