CONFIT GARLIC MAYO
Garlic slowly cooked in olive oil becomes sweet, tender, and rich in flavor. Simply blend with full fat mayo or Kewpie mayo for a sauce no potato can resist diving into.
COOK TIME: for garlic- 20-25 min. | TOTAL TIME: 30 min
INGREDIENTS
- 1 head of garlic
- olive oil
- 1/2 cup full fat mayo or Kewpie (a richer, Japanese brand of mayo made with egg yolks instead of whole eggs)
- 1-2 tsps Sriracha (optional)
- salt
- 1/2 of a lemon
INSTRUCTIONS
1. Peel garlic cloves.
2. Place garlic cloves in small sauce and cover with olive oil.
3. Bring oil to a small simmer. Cook garlic cloves in oil on low for 20-25 minutes, until garlic in golden brown and soft. Pour into another container to stop cooking and set aside.
4. Blend garlic, mayo and Sriracha. Stir in some of the olive oil we cooked the garlic in. Add a squeeze of lemon and salt to taste.
SUGGESTIONS/NOTES
This sauce is delicious with potatoes in any form. It also works well on burgers, fried rice and anything that needs some sweet, creamy, garlicky flavor.
To make sauce smoother, remove that rougher part of the garlic that was part of the root.
Alternate method- take whole head of garlic unpeeled, remove the root. Drizzle with olive oil and wrap in foil. Place in oven or toaster oven on 350 F for 45 min. - 1 hr. Remove and squeeze garlic out of peel. Then blend that with mayo and other ingredients.
