GRILLED WINGS

GRILLED WINGS

Perfectly rendered, sports bar style wings seasoned and basted on the grill with pantry staples, deliver layers of zippy flavor. Ideal for summer entertaining, simple enough for a mouthwatering weeknight dinner.


PREP TIME: 10 min. to season wings | COOK TIME: 1 hr.

 

INGREDIENTS


- wings - Worcestershire sauce


- onion powder - Franks or Crystal hot sauce


- garlic powder - butter (salted)


- paprika - freshly cracked black pepper


- 1 tblsp soy sauce - salt



INSTRUCTIONS


1. Season wings on both sides with salt, onion powder, garlic powder, paprika, black pepper and splash of soy sauce. Allow to marinate, preferably overnight, or at least 30 min.


2. Start up grill or preheat oven to 275 F.


3. If using a charcoal grill, pour all of hot coals on one side of the grill to create a direct heat zone and an indirect heat zone.


4. Before placing wings on grill or in oven, hit them liberally with Worcestershire and hot sauce.


5. Mix some room temperature, salted butter with hot sauce and Worcestershire. Set aside. This will be what we baste our wings with.


5. When grill is ready to go, place wings on the hot side of the grill, over the coals. For wings, I usually try to keep the grill around 350-400 F. For the first 30 minutes or so, with the lid of my grill closed, I focus on getting good color on both sides of the wings, opening the grill to check on the wings about two times. When both sides of the wings have color, baste the wings on both sides with the butter mixture. Move wings to side of the grill without coals- the indirect heat zone. Allow the wings to render off some more fat for another 20-30 minutes. During the last 10 minutes, hit the wings with a few more dashes of Worcestershire and hot sauce. When wings are ready, plate and enjoy.
