MARINATED AVOCADO
Chunks of avocado drenched in soy and citrus. Pass the white rice.
PREP TIME: 10 minutes
INGREDIENTS
- 2 avocados diced
- 1 shallot sliced
- 1 garlic clove minced or 1/2 if you're sensitive to raw garlic in a dressing
- soy sauce
- 1 lime
- olive oil or chili oil
- malden salt (optional and only if you use LS soy sauce)
INSTRUCTIONS
- In a low bowl or container with low sides, grate garlic. Drizzle a small amount of oil and spread the garlic and oil on the bottom of the container. I do this, because once I add the avocado I want to keep it in tact and not mix it with the dressing too aggressively. I also want to make sure no one gets a wad of garlic in one bite.
- Gently, add diced avocado to dish. Sprinkle shallots on top.
- Squeeze one lime all over avocado and shallots.
- Liberally, drizzle olive oil or chili oil over ingredients. Then, liberally drizzle soy sauce over ingredients. A little less liberally if you're using regular soy and not low sodium.
- Gently toss ingredients. Finish it off with a light sprinkle of crunchy maldon salt. Enjoy on a bed of white rice. Pairs perfectly with miso salmon.
