MEATLOAF

Slices of glazed meatloaf paired with silky mashed potatoes and bright, sweet peas. Classic, straight-forward, comfort.

INGREDIENTS


MEATLOAF


- 2 lbs ground beef 80/20 - 2 tblsps Worcestershire


- 1/2 medium onion diced - 2 tblsps Dijon


- 4 cloves of garlic - onion powder


- 1/2 tblsp chopped thyme - freshly cracked black pepper


- bunch of chopped fresh parsley leaves - salt


- 3/4 cup Panko breadcrumbs - olive oil


- 1 egg - 1/2 tblsp butter



GLAZE


- 3/4 cup ketchup - onion powder


- 1/4 cup brown sugar - red pepper flakes


- 1 1/2 tblsp Worcestershire - salt


- Sriracha or Franks hot sauce - black pepper



INSTRUCTIONS


1. Preheat oven to 400 F.


2. In a pan on medium heat, cook onions in a drizzle of olive oil and a small spoonful butter, till softened and just slightly caramelized. Add in garlic and thyme. Cook for another minute. Pour out into bowl and allow to cool.


3. Add chopped parsley, Panko, egg, Dijon, Worcestershire and ground beef. Season mixture with onion powder, salt and freshly ground black pepper. Mix with hands. Take a pinch of the mixture, cook it, and taste. Add salt if needed.


4. Place a rack on a sheet tray lined with foil. Mold your mixture into a loaf on the rack. To get a smoother surface, use wet hands.


5. Place meatloaf in oven. Turn oven down to 375 F. Cook for 30-35 min. A thermometer should read at least 155 F.


6. While meatloaf is cooking. Prepare glaze. In a saucepan combine sugar, brown sugar, Worcestershire, onion powder, salt, black pepper, a pinch of pepper flakes and a couple drops of hot sauce. I like to use Sriracha or Franks. Bring to a boil and cook for about a minute.


7. After your meatloaf has cooked for 30-35 minutes, remove from oven. Paint glaze on meatloaf. Turn on broiler. Move rack closer to broiler. Place meatloaf under the broiler for a few minutes till glaze is bubbling and has a little color. Remove from oven and allow to rest for at least 10 minutes before slicing. Alternately if you don't like using the broiler, turn oven to 475 F and cook till glaze is bubbling with a little color.
